What is Sauerkraut?

Sauerkraut, German for ‘sour cabbage’, is produced when finely-shredded white cabbage heads are fermented by lactic acid bacteria (LAB). Cabbage has been recognized as a super-food that naturally cleanses the liver. When fermented, it becomes an excellent source of probiotics, antioxidants, and vitamins that protect us from diseases and help us stay healthier for longer.

What Does it Taste Like?

Like the name depicts, Sauerkraut has a sour taste. But the premium quality Natureland Sauerkraut has more complex flavor than just sour. It is a bit spicy, a bit sweet, a bit salted, and has a strong and pungent odor with a hint of flowers.

Origin

The basis of our fresh Sauerkraut is the non-hybrid white cabbage variety “Marner Lagerweiß” from Kultursaat e. V., which we cultivate at our biodynamic farm in Hedwigenkoog, in the heart of the traditional cabbage growing area of Dithmarschen in northern Germany.

Ingredients & Production

After the harvest, the “Marner Lagerweiß” is finely shredded on site by our cabbage master, pounded with rock salt from the Luisenhaller salt works in Göttingen and then firmly stuffed into special fermentation jars. As the Sauerkraut matures in the jar, without interruption by pasteurisation, the valuable, bioactive ingredients are preserved. Stored in a fridge, it keeps for three months.

Labeling and packaging are handled by a subsidiary project of “Stiftung Mensch,” the largest German social foundation.

How Much Sauerkraut Should I Eat Daily?

Eating 7 g to 10 g (or about 1 tablespoon) of Sauerkraut daily has a very good effect on the gastrointestinal tract.
